Coconut milk is made by soaking shredded coconut in water. You can make your own coconut milk or buy canned coconut milk. Cooks use coconut milk in many dishes, particularly Thai cooking and curries. It can be used as a milk substitute, but does not contain calcium. If you're lactose intolerant or allergic to the casein in milk, or a vegan who wants to avoid animal products, you may prefer coconut milk as a substitute for cream in your coffee. The coconut milk will not be as thick and rich as real cream.

Shake the can of coconut milk before opening. This helps mix it well and helps it stay thicker. Canned coconut milk is thicker than the varieties sold in cartons in your grocer's refrigerator case. Canned coconut milk is closer to the consistency of dairy cream.
